Healthy Snack: Mini Fritatas
I was inspired by a friend the other day when she was telling me of her Mini Fritatas she makes as a snack. So inspired that I went straight home and made a bunch of them. I made the smoked salmon, spinach and feta – that’s them in the picture. Sorry the lighting’s not so great.
These snacks are so quick and easy and completely guilt free.
Grab a muffin tray and use 1 egg per muffin – whisk the eggs in a bowl adding a dash of milk and for extra flavour you can add 1/4 of a vegetable stock cube. I use the Massel brand for a healthier choice.
Then just add your filling of choice. Here are a few ideas to get you started.
Healthy Fillings:
Smoked Salmon, Baby Spinach Leaves, Feta
Mushroom & Onion
Grated Zucchini, Onion & Bacon (cut fat off bacon & brown in a frypan before adding to mix)
Grated Zucchini, Carrot & Parsley
