Healthy Dinner: Fish Parcels with Lemon & Dill
Are you running around, preparing for the holidays with no time to make a delicious, healthy meal? Fear not, this delightful summer dish takes just 10 minutes. Yum!
SERVES: 1
INGREDIENTS:
200g Snapper
10mls lemon juice, bottled
1 pinch black pepper
1/4 lemon, medium
100g fine green beans
1/4 red onion, small
1/2tsp dried dill
1/4 red capsicum, large
METHOD:
Spray a square of baking paper or foil with oil spray (or brush with a little oil).
Lay the fish fillet on the sheet (1 sheet per fillet if cooking for more than 1 serve), top with onion slices, lemon slices, capsicum slices, dill and pepper. Pour lemon juice over each fillet.
Wrap tightly in the paper. Place on a baking tray and cook in a moderate oven (180ºC) for 4 to 5 minutes or until fish flakes easily with a fork. Alternatively, the fish can be cooked in the microwave oven – wrapped in baking paper – or a barbecue plate.
To serve, remove lemon slices and discard. Serve with steamed or microwaved green beans.
Chefs suggestion: Freshly chopped parsley can be substituted for the dill. Or you can used 1/4 teaspoon mixed dried herbs along with one or two fresh bay leaves for a stronger flavour.
