Chicken & Mushroom Soup
Serves: 4-6
Ingredients
1kg fresh field mushrooms, roughly diced
400g cooked chicken breast, shredded
2-3Tbsp Olive Oil
2 cloves garlic, crushed
10g fresh rosemary
3g fresh thyme
8 spring onions, sliced on the diagonal
1.5litre vegetable stock
Several dashes tamari or soy sauce
Salt & black pepper
Instructions
1. Place mushrooms, garlic, rosemary, thyme, spring onions and tamari or soy sauce in a heavy-bottomed saucepan with olive oil.
2. Cook, stirring occasionally, until mushrooms begin to exude a great deal of liquid and turn brown.
3. Add the stock, season with salt & pepper, and simmer partially covered for 45 minutes. Add the shredded chicken to heat through.
4. Adjust seasoning to taste and serve.
